Healing Herb of the Week: Garlic (by Jordin Rubin)
This ancient herb has more going for it than its unmatched flavor. It is an effective infection fighter, and it even discourages irritating and potentially dangerous mosquitoes and ticks. It is a painkiller, it stimulates the immune system, and it is helpful for treating asthma, diabetes, and high blood pressure. According to Dr. Rex Russell, "Population studies indicate an inverse relationship between the amount of garlic consumed and the number of cancer deaths in a given population!"

Roasted Garlic
One of the simplest ways to enjoy garlic is to roast it. Milder than its raw form, roasted garlic imparts a buttery and mellow flavor that can easily be spread onto bread or vegetables or used in sauces. Just slice the top off a whole bulb of garlic, set in a baking pan, and sprinkle with oil. Bake for an hour.
