Mashed Orange Yams

Healing Recipe of the Week: Mashed Orange Yams

This delicious side dish is most common during the winter holidays, but is at home on your table any day of the year.

4 to 5 medium yams
3 Tbsp. butter
1 to 2 Tbsp. honey
1/3 to 1/2 cup orange juice
1/4 tsp. cinnamon
Pinch of freshly grated nutmeg
Celtic sea salt and pepper

Preheat oven to 375 degrees. Pierce yams in several places with a sharp knife and bake until soft, about 50 minutes. Remove from oven; when cool enough to handle, peel yams and place flesh in a large bowl. Add all remaining ingredients and mash until smooth. Adjust seasoning and serve hot.

Serves 4.
