- Using a sharp knife, cut the pointed top off a single head of garlic, leaving the head intact, but exposing the tops of the individual cloves.
- Place the head in a shallow baking dish and top with salt and a few pats of butter. You can also add herbs or other seasonings, like thyme, black pepper, or other flavors you enjoy.
- Bake for about 30 minutes at 400 degrees, or until the tops of the cloves are brown and you can pierce them easily with a fork.
- Let the head cool, then squeeze the individual cloves out of their husks and mash them to form a spread.

Garlic Goodness
We've discussed how garlic can be an important disease fighter and even an insect repellent. But how do you get the health benefits of this superfood without having to deal with bad breath and smelly hands? One solution is to roast garlic, which takes away all of its bitterness and leaves you with a smooth, almost sweet-tasting spread for toasted bread or a topping for roasted meats. Here's a simple recipe:

Robin, I used to do this all the time, only instead of butter I used a good EVOO (extra virgin olive oil) to roast them, and much healthier!
