My 2nd Homemade Cake

(Back in the beginning of April) I made homemade cake for the first time 2 weeks in a row. This time it was for Owen's 2nd birthday. I used a cake recipe but a cupcake tin just for fun. It was poor timing for all this baking though because it happened that he got the stomach bug on his birthday and it hung around for a week! Poor baby. It was the most fluffy yummy cake though =) and the frosting should be illegal it is so good. You must try this at home!


1 1/2 cup(s) sifted cake flour
1 1/2 teaspoon(s) baking powder
1/4 teaspoon(s) salt
1/2 cup(s) (1 stick) unsalted butter, softened
1 cup(s) sugar
2 large eggs, room temperature
1/2 teaspoon(s) vanilla extract
1/2 cup(s) whole milk

Ingredients:

  • 8 oz package cream cheese, softened
  • 1/4 cup (1/2 cube) softened margarine
  • 2 teaspoons milk
  • 1 teaspoon vanilla
  • 4 cups powdered sugar

Preparation:

With an electric beater, beat cream cheese, margarine, milk and vanilla on low speed until smooth. Beat in powdered sugar, 1 cup at a time, until smooth and of desired consistency. Makes plenty to frost one 13 x 9 inch cake or a two-layer cake.

Fruit and cream cheese frosting are so heavenly to a pregnant lady =)
